Bikini Recipe

Yields 10 servings

For the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Cordial: Put the listed components in a pot, heat until it reaches a light boil, stirring so the sugar melts. Then, remove from the heat allowing it to cool down entirely. Pour into a sealable bottle, cap it and store in the refrigerator, where it will keep for around a month.

Preparing the Premix: Mix all the liquid ingredients into one large bottle, leave to sit for one hour, then strain best through a fine cloth, so it's completely strained.

To serve: Add 85ml from the premix into your mixing glass packed with ice, and stir carefully for a minute to cool it down. Strain into a frosted cocktail glass or equivalent, garnish with the cranberries and complete it using a light spray with the mandarin essence over the drink.
